- 1 serving of Halibut
- 2 Russet potatoes (peeled and washed)
- 1/4 cup of malt vinegar
- 8 tablespoons of oil
- Zest from one whole lemon
- 1/4 teaspoon of salt
- 1/4 cup of flour (optional)
Cut serving of fish into about 8-10 pieces. Sprinkle lemon zest and salt onto the fish. Set aside.
Using a spiralizer, spiralize the potatoes. Place spiralized potatoes into a bowl and soak them in the malt vinegar for a minimum of 15 minutes to help remove the starch and infuse with flavour.
Begin to wrap the pieces of fish with the spiralized potato. This next step is optional, you can toss your wrapped pieces of fish in a light dusting of flour if you wish to help crisp them up.
Toss remaining spiralized potatoes in 4 tablespoons of oil. Place on a cookie sheet and bake in the oven for 25 minutes, stirring occasionally.
Over medium-high heat, add in 4 tablespoons of oil. Add in about half the pieces of fish at a time and let brown. Continuously rotate each one until brown all over and then remove from heat and place on a paper towel to remove excess grease.
Serve up your fish IN chip with a side of crispy potato strings. Add a side of coleslaw for a fresh element.
