Crab cakes

INGREDIENTS:
For the crab cakes:
- 1 cup of crabmeat
- 1 egg
- 3 tablespoons mayo
- 4 teaspoons lemon juice
- 1/4 teaspoon red chilli pepper flakes
- 1 1/2 teaspoons dried tarragon
- 1 tablespoon of butter
- 3/4 cups crushed Ritz crackers
For the sauce:
- 3 tablespoons mayo
- 3 tablespoons sour cream
- 3 tablespoons dijon mustard
- 2 tablespoons lemon juice
DIRECTIONS:
For the crab cakes:
Crush Ritz crackers.
Whisk together egg, mayo, lemon juice and herbs. Gently fold-in crabmeat. Begin gradually adding in crushed Ritz crackers.
Shape 8 crab cakes. Place them on a skillet at medium-heat. Add butter and cook until golden brown on each side, about 5 minutes each side.
For the sauce:
Mix all ingredients in a bowl. Serve crab cakes with a small dollop of sauce.
